Shorter… (no printf calls)

man() {
    LESS_TERMCAP_mb=$'\e'"[1;31m" \
    LESS_TERMCAP_md=$'\e'"[1;31m" \
    LESS_TERMCAP_me=$'\e'"[0m" \
    LESS_TERMCAP_se=$'\e'"[0m" \

    LESS_TERMCAP_ue=$'\e'"[0m" \
    LESS_TERMCAP_us=$'\e'"[1;32m" \

or you can add the following to your ~/.profile and not override default commands - they're just environment variables anyway

export LESS_TERMCAP_mb=$'\e'"[1;31m"
export LESS_TERMCAP_md=$'\e'"[1;31m"
export LESS_TERMCAP_me=$'\e'"[0m"
export LESS_TERMCAP_se=$'\e'"[0m"
export LESS_TERMCAP_so=$'\e'"[1;44;33m"
export LESS_TERMCAP_ue=$'\e'"[0m"
export LESS_TERMCAP_us=$'\e'"[1;32m"

Tnx @forkbomber!! I totally missed this when looking over oh-my-zsh plugins.
